How would a regular, mortal go about becoming a demigod? And how does a demigod go about becoming a full God?

Sounds like you've been playing too much Dungeons and Dragons. You can't become a god or even a demigod because there are no such thing.

As far as game play is concerned, it makes no difference. Just consider them as opposite teams.

If a creature such as Demigod of Revenge is countered, does the ability still take effect?

The ability says "When you play Demigod of Revenge, return all cards named Demigod of Revenge from your graveyard to play."

If it is countered, it never comes into play. Does the ability still take effect?

Demigod creates a triggered ability when you play it which exists independently of the creature spell. This means that it will still take effect, even if the Demigod is countered.

...But there's more. After you play the Demigod it's triggered ability is on the stack above the creature. If your opponent tries to counter Demigod BEFORE the trigger resolves (which he is allowed to do) then you get the Demigod back with his own triggered ability. He must specifically state that he is letting the trigger resolve, then counter the creature in order to keep it from coming back.
