what's the difference's between the Saitek X52 Pro Flight System Controller and the Saitek X52 Flight Control System. I'm planning on buying one can someone help me?
The X52pro seems like an upgrade over the x52, though I'm having a hard time determining what exactly they upgraded. Terms like "Premium Engineering" and "Advanced" Multi Function Display are meaningless unless qualified.
My guess may be that they changed some mechanical aspect of the joystick, eg, the molds were retooled to slightly closer tolerances than the previous one, or slightly new designs or materials were used.
After looking at the manuals, it appears that they may have changed/improved the firmware the MFD runs on, in order to improve the integration with certain programs (most notably Microsoft Flight Simulator X and Windows Media Player).
I'm going to guess that beyond that and some minor tweaking of the mechanicals they are probably pretty much the same. If you are a hard core game who wants to be able to program new interactions the X53 and another game or software you might want the Pro system, and if you just want to fly, you would probably be happy with the standard X53 Flight Control System.

But I don't have either, so personally I don't know, they look pretty similar to me.

Yes, that looks like a great system.
Only thing I would say is to not pay extra for the 256GB solid state drive. SSDs are still very new technology and the big ones (especially) really aren't very good. If you really want a good SSD, get an Intel one, but they don't come bigger than 160GB last time I checked.
